Hello, all

I have been buying sea cucumbers from XLSeafood for at least 5 years. My families have tried most of their products and our favorite includes Alaska red sea cucumber, Mexican sea cucumber, fish isinglass and other products they update periodically.

It makes me feel very lucky to share my cooking experiences – dried red sea conch from Australia. Please see the following pictures during the whole process in three parts – A. Preparation, B. Chinese sea conch stir fry and C. Sea conch soup in coconut milk. Hope you can get inspired and create your own signature dish.

A. Preparation:

1. This is the one-pound package received. It was delivered earlier than expected schedule.

2. I follow the instruction and soak them in water for 3 days, changing water every 12 hours. Although they said it gets softer after one day, the bigger piece still needs more time than small ones.

3. There is a small part to clean. Most of the pieces are cleaned already but if you see something like this black dot, please remove it. Otherwise, it will affect the flavor.

4. I slice sea conch in thick cut and separate them in two portions to use.

1.这是收到的一磅包裹。配送送达时间比我预想到的要早。

2. 我按照泡发说明,将它们浸泡在水中3天,每12小时更换一次水。
说明里写了在一天之后螺肉变软,但是大螺头需要比小螺头泡发更久的时间。

3.泡好的螺肉需要做一定处理。虽然现成的大多数螺肉已经是清理过的,但如果你看到有黑点的部分,建议将其切除。否则,会影响味道。

4.我将海螺厚切成片后,分成两份使用。

B. Chinese sea conch stir fry

Ingredients: Sliced salty pork belly, garlic chives, minced onion, dried Chinese tofu and sliced sea conch.

第二部分:第一道菜,中式炒螺肉

食材准备:切片猪五花肉(盐腌),蒜苗,洋葱末,豆腐干和螺头切片。

B1. First place them in non-stick pan for 3 mins and 3 mins for the other side.

B2. Then add minced onions to cook for another 5 mins.

B3. Add sea conch together and cook them evenly for both sides.

B4. When sea conch color gets yellower, add dried Chinese tofu cooking for 3 mins.

B5. At last, add garlic chives then cook for another 2 mins.

B6. This is how it looks. Yummy?

第一步:首先将五花肉放在不粘锅中煎3分钟,再翻面煎3分钟。

第二步:然后加入洋葱再炒5分钟。

第三步:放入螺肉,均匀地翻炒。

第四步:当螺肉颜色变黄时,加入豆腐干翻炒3分钟。

第五步:加入蒜苗再炒2分钟。

第六步:起锅上碟。超级好吃!

Notes:

1. Since salty pork belly does have a lot of fats, I do not use any oil in case it gets very greasy.

2. Garlic chives are very each to cook, please use low temperature when you cook it.

3. I use onion to cook but you can also use scallion instead.

4. If you like thick cut for sea conch, please cook them longer than thin cut.

5. These are very basic ingredients to create the flavor, but you can customize your own ways, for example, use broccoli, cauliflower or other vegetables instead of garlic chives.

 注意:

1.因为五花肉含有大量油脂,所以不需要额外加油。

2.蒜苗很容易熟,因此烹饪时请用小火。
3.我喜欢用洋葱来做菜,也可以用葱来代替。

4. 如果你喜欢更厚的螺肉,那么炒的时间就要延长。螺片切的越薄,炒制时间越短。

5.我的菜谱只是最基本的食材参考,您可以按照自己的喜好搭配不同配菜。例如,使用西兰花,花椰菜或其他蔬菜代替蒜苗。

 

C. Sea conch soup in coconut milk

Ingredients:  Japanese dried sea scallops (6 small pieces), minced onion, sliced sea conch in thick cuts, canned coconut milk, canned sweet corns, canned mixed vegetables, Alaska sea cucumber flower (4 pieces), mini potatoes.

第三部分,第二道菜:椰奶海螺汤

食材准备:日本干贝(6颗),切碎的洋葱,切成薄片的螺肉,罐装椰奶,罐装甜玉米,罐装杂菜,旭龙行的海参花(4颗),小土豆。

C1. Add a little olive oil on a non-stick pan for 1 minute.

C2. Add minced onions with sliced sea conch for 10 mins.

C3. Add mixed vegetables and sweet corns to cook for another 3 mins.

C4. Move everything to another cooking pot, adding coconut milk and chopped mini potatoes, and continue cooking for 10 mins.

C5. Add Alaska sea cucumber flower and cook for another 15 mins. The color will get yellow when sea cucumber flower melts in the soup.

C6. Serve on a plate.

C7. Serve in a bowl.

第一步:在不粘锅上加少许橄榄油,加热1分钟。

第二步:加入海螺肉片和切碎的洋葱炒10分钟。

第三步:加入混合蔬菜和甜玉米再煮3分钟。
第四步:将所有食材倒入另一个锅中,加入椰奶和切块的土豆,继续烹饪10分钟。
第五步:加入泡发好的海参花,再煮15分钟。当海参花在汤中融化时,奶色的汤会变黄。
第六步:关火装碟。

第七步:上菜。

Notes:

1. I use another two products – Alaska sea cucumber flower, and Japanese dried sea scallops to add additional seafood flavor. You do not need to add salt. These are all natural.

2. Mini potatoes and sea conch will absorb coconut milk so when you taste it, the texture gets smoother.

注意:

  1. 本道菜,我用另外两种产品 - 海参花和日本干贝来增加鲜味。因此不需要加盐。整道菜都是纯天然口味。

  2. 土豆和海螺肉在烹煮过程中,会吸收椰奶,所以当你品尝它时,土豆和螺肉的口感会变得更加嫩滑。
