03Select noodles and side dishes
For noodles, I chose Longkou vermicelli. After the water is soaked, it becomes noodles, and it will have a fragrant rice fragrance when fried.
The reason for not choosing noodles is that noodles tend to stick to the pan and are not fragrant enough.
For side dishes, I chose the standard 4 dishes of fried noodles: onion, bean sprouts, shallots and garlic.
The amount of vermicelli, 1 roll serves 1 person, and the amount of side dishes is optional.
After soaking Alaska red ginseng for 3 days, cut into sections for later use.
Soak vermicelli in boiling water for 10 minutes and then dry it for later use.
Bean sprouts, shallots, onions, and garlic are washed and set aside, and shallots and onions need to be shredded.
Then it officially entered the cooking step.
Step 1: Stir-fry red ginseng
Heat peanut oil in a pan.
First add minced garlic and onion and sauté until fragrant.
Then add the red ginseng segment and stir-fry for 3 minutes.
Then add some oyster sauce and light soy sauce.
The amount of seasoning is based on your own taste. If you want it to be salty, add more light soy sauce, and if you want it to be sweeter, add more oyster sauce.
Continue to stir-fry until the juice is thick and ready to use.
06 Step 2: Fried noodles
Heat peanut oil in a pan.
Add minced garlic and sauté until fragrant.
Then put the soaked vermicelli into the pot and fry for 30 seconds.
The function of this process is to shape the bottom of the noodle noodles, and the vermicelli should not be stir-fried once in the pan, otherwise the rice noodles will stick to the pan and shatter.
After 30 seconds, introduce 1-2 teaspoons of dark soy sauce, and keep stirring the noodles.
Cook for 3 minutes, until all the noodles are browned in color, then add bean sprouts, and stir fry the noodles and bean sprouts evenly.
Note: Don’t worry about the bean sprouts being caught, because the boiling noodles will cook the bean sprouts.
07 Step 3: Sea Cucumber Fried Noodles
Pour all the fried red ginseng juice into the noodles in the pot.
Stir-fry the sea cucumber and noodles evenly over high heat.
During the period, you can continue to add salt or light soy sauce to taste, depending on the taste.
Before serving, add shallots and stir-fry, and the chow mein is complete.
